Egg, Bacon and Cheese Muffins



Egg, Bacon and Cheese Muffins
You will need the following ingredients:
•8-10 eggs
•1/4 cup cream
•1 cup gouda cheese...
•1 packet bacon
•1 onion
•1 green pepper
•coconut oil
•salt & pepper
•double-thick cream Greek yoghurt

Step 1: Preheat the oven to 190°C. Next, chop the bacon into small pieces and fry it in the coconut oil. Once it is golden and cooked, set aside to use later. Fry the onion and green pepper in the leftover oil in the pan. Grate the cheese. Finally, mix the eggs, yoghurt, salt & pepper in a bowl or jug.

Step 2: Grease a muffin pan well with coconut oil and start scooping all the prepared ingredients into the pan. Start with the onion and green pepper mixture and then the bacon. Next pour the egg mixture into the muffin pan and finally add the grated cheese on top.

Step 3: Bake the egg muffins for 15 – 20 minutes in the oven at 190°C. The egg mixture will firm up and the cheese will turn light brown.

Step 4: Enjoy your delicious egg muffins with a generous scoop of double-thick cream Greek yoghurt.

Final note: You can create a wide variety of egg muffins by being creative with the fillings. Try spinach and feta, or ham and mushrooms. The possibilities are endless
