Braised Lamb Chops with Mash and onion gravy.
6-8 Lamb Chops ...
2 onions chopped in thin slices / slivers
2 tablespoons of vegetable oil
1teaspoon of salt
3 teaspoons of fine black pepper

3 tablespoons of chutney
1 cup of hot water .
Mashed Potatoes-
10 potatoes peeled and cubed , boiled in a pot with a teaspoon of salt until soft - drain off water and leave potatoes in pot - add 2 tablespoons of butter and 1 cup of milk and mash until smooth and it resembles beautiful soft clouds .
Method for Braised Lamb Chops .
Add your oil to a large heated pot and brown your meat on both sides , the browner the better( high heat) . Now add your salt , pepper and onions . Stir fry your onions with the meat ... Do this until all onions have turned a nice golden brown, take your time with this . Now mix your chutney with the cup of hot water and stir till well combined , add the chutney water to the Lamb and onion mixture ... Now turn down the heat to medium-low ... Allow meat to simmer till tender - 35minutes ... If you want less gravy and more sticky gravy/ chops allow to simmer for another 10 minutes .
Serve with mashed potatoes and veggies .
