VRUGTEKELKIE NAGEREG
2 Cups self raising flour
1½ cups sugar
2 tsp(10ml) Bicarbonate of soda
2 beaten eggs...
½ tsp salt

1 large tin (820g) fruit cocktail including juice
Method :
Mix all ingredients together and pour into greased ovenproof dish
Bake at 175C for 45 minutes
Topping:
1 Cup sugar
60ml margarine or butter
1 small tin evaporated milk
1 cup coconut
1 tsp vanilla essence
Method:
Boil all ingredients together for 5 min.
As soon as cake is removed from over prick all over the top of cake with skewer and pour over the hot topping. Serve hot or cold with cream, ice cream or custard
