Baked Eggs with Tomatoes and Feta Cheese




Baked Eggs with Tomatoes and Feta Cheese
20 mins to make, serves 2
Produce
1 large tomato...
1/4 tsp Oregano, dried
4 Eggs

Olive oil spray
1/2 cup Feta cheese
Instructions
1.Preheat the oven to 375 F / 190 C
2.Spray ramekins with olive oil spray
3.Add chopped tomatoes and crumbled feta to ramekins
4.Sprinkle with dried oregano
5.Crack 2 eggs to each ramekin
6.Sprinkle with salt and freshly ground pepper
7.Place it in the hot oven and cook until egg whites are set, about 15-17 minutes (keep it in the oven longer if egg whites are still running, but watch it carefully so you don't overcook your egg yolks.)
