Bacon Quiche (4-6 servings)
250 g Eskort Streaky Bacon, chopped
500 ml cheddar cheese, grated
10 ml mustard powder
30 - 40 ml cake flour
500 ml milk
45 ml fresh parsley, chopped
4 extra large eggs
Preheat oven to 180°C and butter an ovenproof dish or use nonstick spray
Fry the Eskort Streaky Bacon until done, mix with the cheese and set aside.
Mix the mustard powder, cake flour and salt with a little milk to form a paste.
Stir in the remaining milk.
Add to the bacon and cheese mixture.
Beat the eggs well and add.
Turn into the dish and bake for about 30-40 minutes until golden brown and set.
For a Banting/healthier option, try the following:
Replace the 30 - 40 ml cake flour with 30 ml almond flour. The quiche will bake to the same consistency as with cake flour. You can leave the flour out all together, however, your quiche will be slightly more rubbery.
