Cheese and Celery Muffins




Cheese and Celery Muffins

Ingredients:
2 cups self-raising flour
2 tablespoons butter (30ml)...
½ teaspoon salt
2 sticks diced celery
2/3 cup cheddar cheese (grated)
1 clove garlic (crushed)
dash of cayenne pepper
1 large egg
2/3 cup milk (160 ml)
Parmesan cheese to sprinkle over the top

METHOD:
Preheat oven at 200‘C
Rub butter into flour so it resembles breadcrumbs.
Add the celery, cheese, garlic and cayenne pepper.
Beat the egg and milk together.
Make a well in the centre and add the egg and milk.
Mix till all well combined.
Spoon into greased muffin tins and bake at 200’C for 20 to 25 minutes.
