Bacon and Eggs Muffin recipe

Bacon and Eggs Muffin recipe
9 large eggs...
½ lb. bacon
1 tomato
2 green onions (scallions)
1 c. diced cremini mushrooms
1 c. chopped arugula

1 tbsp. fresh thyme
1.Preheat oven to 375 degrees F. In a large bowl, lightly beat eggs. Stir in cooked bacon, tomato, green onions, mushrooms, arugula, thyme, and salt and pepper to taste.
2.Divide mixture among 12 medium-sized muffin tins and cook until set, about 20 minutes. Let cool several minutes before unmolding.
