500 g Golden Cloud Savoury Flavoured Muffin Mix
150 ml sunflower oil
320 ml milk
2 large eggs
125 ml grated mozzarella
45 ml chopped black olives
6 peppadews, chopped
30 ml freshly chopped herbs (optional)
1 Preheat the oven to 180 ˚C. Grease a 12 cup muffin pan or 12 ramekins or 12 small clay pots (see tip).
2 Whisk the oil, milk and eggs together. Place the Golden Cloud Savoury Flavoured Muffin Mix into a medium sized bowl. Add the remaining ingredients and mix. Make a well in the centre of the muffin mix and add the liquid mixture.
3 Using a wooden spoon, stir until just combined. Do not over mix. Spoon the batter into the prepared tins.
4 Bake for 15 - 20 minutes. Tip: We lined some small terracotta pots (purchased from a garden centre) with paper casings as they had a small hole in the base. You could also use foil to line them.
