Madeira Loaf




Madeira Loaf
Ingredients
200 grams of butter at room temperature....
1&1/2 cups of sugar
3 eggs
2 tablespoons of vanilla essence or 1 teaspoon of vanilla extract.
1/4 teaspoon of salt

2 teaspoons of baking powder
2 &1/4 cups of sifted cake flour
2 tablespoons of milk
Method
First beat the butter for a few seconds with a hand whisk or electric beater , next add your sugar and beat for about 2 minutes . Next add your eggs one at a time , beating for about 40 seconds between each egg , next add in the rest of the ingredients and whisk just until combined .
Spoon into a greased thick base loaf tin or pyrex loaf dish and bake in a preheated oven at 180 deg C for 50-60 minutes , or until golden brown and when you insert a skewer it comes out clean .
My tip is with any loaf cakes , bake for the first 25 minutes from the bottom element only then after 30 minutes switch back to both . For fan ovens always bake at 20degC less than instructed in my recipes . So if you have a fan oven bake on 160degC . With Madeira loafs or cakes you can add zest of a lemon or orange or a little lemon juice .
And its that easy .
