Fatima's Famous Crispy Buttermilk Chicken.
Ingredients
10 pieces of chicken with the skin on...
1 cup of buttermilk
3 tablespoons of chopped garlic
1 tablespoon of salt

For the Flour mix
2 tablespoons of paprika
1 tablespoon of black pepper
1 cup of cake flour
1 cup of breadcrumbs
1 tablespoon of cornflour
1 teaspoon of baking powder
1/2 a teaspoon of salt .
Oil for deep frying
Method
Place chicken in a pot with 4 cups of boiling water , add the salt and garlic and parboil for 25 minutes on a slow to medium heat , remove chicken and allow to cool . Add cooled chicken to buttermilk and leave one side for 10-15 minutes. Or you can omit the parboiling and marinade the raw chicken in the buttermilk for a few hours or overnight in the fridge.
Mix all dry ingredients and place in a large jiffy plastic bag or just a big bowl if you do not have a plastic bag . Now take a few pieces of chicken out of the buttermilk and into bag and shake a bit till chicken is completely covered with dry mix. Do this now with all the chicken and place on a tray ready to deep fry .
Deep fry a few pieces at a time on a medium to high heat for about 6 minutes and remove from oil - if you did not parboil the chicken and marinated it you need to fry it for about 10-12 minutes . This chicken has a delicious crispy skin and is juicy and moist inside .
Serve with veggies or a salad .
