Roast Winter Vegetables




Roast Winter Vegetables
Winter vegetables are easy to roast in the Airfryer
Ingredients
Serves: 4
200g parsnips
200g celeriac
200g pumpkin
1 red onion, in wedges
1 tablespoon fresh thyme
1 tablespoon olive oil
sea salt, to taste
freshly ground black pepper, to taste

Directions
Preparation:5min  ›  Cook:20min  ›  Ready in:25min 
1.Preheat the Airfryer to 200 degrees C. Grease a small, round baking dish, about 16cm diameter.
2.Peel the parsnip and the celeriac and cut them into 2cm cubes. Remove the pumpkin seeds and cut the pumpkin into cubes (do not peel).
3.Mix the vegetables and the onion with the thyme, olive oil, sea salt and pepper to taste.
4.Place the vegetables in the basket and slide the basket into the Airfryer. Set the timer to 20 minutes and roast the vegetables until they are nicely browned. Stir the vegetables once when cooking.
