Fatima's delicious Koeksisters Recipe
Ingredients
8 cups of cakeflour
2 tsp of baking powder
2 pckts of Instant yeast
3 tbsp of sugar
4 tbsp of butter( melted)
1 tsp of salt
1 cup of mashed potato
Dried naartjie / or the zest of 2 fresh naartjies ( optional)
2 tablespoons of fine Ginger
3 tablespoons of mix spice
4 tablespoons of aniseed
3 tablespoons of fine cinnemon
Oil for deep frying
Sugar and stick cinnamon for sugaring
Fine coconut
Method
Mix all ingredients together with warm water until a soft dough forms ( dough must be very soft/ a bit wet).Knead dough for 10 minutes using a little oil on your hands to stop from sticking, rub some oil over dough , cover with cloth and allow to rise
for an hour . Roll out into little ball shapes and fry in hot oil until dark brown . Sugar and cover with fine coconut . For wet koeksisters , prick with a knife and leave in simmering sugar water for a min or so .
Sugar water
Boil 5 cups of water with 4 cups of sugar and 5 cinnamon sticks .. For about ten minutes stirring occasionally.
Makes about 50-60 koeksisters
