Mushroom Salad

500g mushrooms, juice of half lemon, salt, 120ml vinegar, 6 T olive oil, 2 crushed garlic cloves, 1 bay leaf, 1 sprig thyme, 1 T chopped parsley. // Clean mushrooms, place in saucepan, cover with cold water, add lemon juice & salt. Bring to boil, simmer 10 min. Drain & transfer to bowl. Combine remaining ingredients in pan & simmer for 30 min. Pour marinade over mushrooms & chill for 24 hours. Drain off marinade before serving.
