Strawberry jam - IN THE OVEN

Freaky recipe: Strawberry jam - IN THE OVEN!!! Never made jam this easy!!!

Jam (you can also use other soft fruit)
500g fresh strawberries, washed, cut off top, slice or cut smaller
500g castor sugar
2 tbsp lemon juice
2 shallow oven pans, to fit in next to each other

Preheat oven to 180oC. Sterilize your jars. Spread the castor sugar in one pan (I used 2 rectangular glass pans), the strawberries in the other pan. Bake it for 30 minutes. Make sure your sugar doesn't caramelize - my oven is hotter at the back, so I should have turned pans around.

Take from oven, spoon the sugar with the strawberries, add the lemon juice, mix well and spoon into the jars.
