Brunch in a cup
Blueberry Muffin in a Mug

Prep Time: 5 mins Cook Time: 2 mins
Serves: 1...

•¼ cup flour
•1 tbsp sugar
•¼ tsp baking powder
•3 tbsp milk
•1 tbsp melted coconut oil (or vegetable oil)
•¼ tsp vanilla extract
•¼ cup fresh or frozen blueberries

Toppings :
•1 tbsp coconut oil
•1 tbsp flour
•1 tbsp sugar

1.In a microwave-safe mug combine the flour, baking powder, and sugar.
2.Stir in the milk, coconut oil/vegetable oil and vanilla.
3.Place the berries on top.
4.To make the crumble topping:
5.Crumble together the coconut oil, flour and sugar and sprinkle it on top of the blueberry muffin mix.
6.Microwave on high for 2 minutes.
