Health rusks with Jungle Energy Crunch Muesli
Makes 48 rusks


360 g (500 ml) Jungle Energy Crunch Muesli Nuts & Raisins
1 kg Nutty Wheat flour
240 g (500 ml) cake flour
200 g (250 ml) brown sugar
5 ml salt
10 ml baking powder
5 ml bicarbonate of soda
5 ml cream of tartar
250 g melted butter, cooled
500 ml plain yoghurt
2 jumbo eggs
200 ml oil


1. Preheat the oven to 180 °C. Grease three 28 x 11 cm bread tins. Mix together the flour, sugar, salt, baking powder, bicarbonate of soda and cream of tartar in a mixing bowl.
2. Add the rest of the ingredients and knead to mix it all together. Use your hands to shape the dough into small balls and place them into the bread tins to fit snugly together. Bake for 1 hour or until a skewer inserted comes out clean. Allow to cool before breaking the rusks into smaller pieces. Arrange the rusks in a single layer onto baking sheets and put them back into the oven for 6-8 hours at 100 °C to dry out.
