Candied Fruit biscotti

Ingredients: ...

180g flour
2.5ml Moir’s Baking Powder
2.5ml ground cinnamon
2.5ml salt
80g eggs

90g granulated sugar
125ml olive oil
5ml Moir’s Vanilla Essence
2.5ml Moir’s almond essence
6og toasted walnuts, chopped
150g Moir’s Glace Fruit

Method:

Whisk together flour, baking powder, cinnamon and salt.
In a mixer, beat eggs, sugar, oil and essences until thoroughly combined. Fold in flour mixture alternating with walnuts and candied fruit.
Shape dough into a flattened log. Bake in a preheated at 160°C for 20 to 25minutes or until slightly golden.
Remove from the oven and set aside for 10 minutes without turning oven off.
Cut baked log diagonally into slices, lay on the baking sheet and return to oven. Turn off heat, but leave biscotti in oven for 30 minutes.
Cool completely on racks before storing in an airtight container. See More
