Malva pudding

Malva pudding

Serves: 10-12


50ml melted or soft margarine
400g white sugar
2 eggs
525ml flour, sifted
10ml bicarbonate of soda dissolved in 500 ml milk
30ml All Gold Smooth Peach Jam
30ml white spirit vinegar
Pinch of salt

For the sauce
500ml cream
100g brown sugar
125ml All Gold Smooth Peach Jam
125g butter or margarine
250ml water
5ml vanilla essence
Pinch of salt

Preparation method

Beat the butter or margarine and the sugar together well. Add the eggs, one at a time beating well after each addition. Add the remaining ingredients and beat until you have a nice smooth batter without any lumps. Pour into a large greased baking dish or 2 smaller baking dishes and bake for about 35 – 40 minutes at 180°C or until brown and done.

Meanwhile, boil the sauce ingredients together for about 5 minutes until the sugar has melted and it is nice and thick. Stir often to avoid burning.
Once the pudding is baked, simply pour the hot sauce over it and allow it to soak in.

Serving Suggestion

Serve hot with ice-cream, cream and custard.
