Rusks for diabetics
3 Eggs
125 ml (½ c) Sugarlite
250 ml (1 c) Jungle Oats, Cooking Oats
250 ml (1 c) Bran
250 ml (1 c) Jungle Ultra Energy Instant Oat-Based Cereal, Original
7 ml (1½ t) Baking powder
100 g Nut and seed mixture
Preheat the oven to 180 °C and grease a baking sheet.
 1. Whisk the eggs until pale and frothy. Add the sugarlite and whisk well.
 2. Combine the Jungle Oats, Cooking Oats, bran, Jungle Ultra Energy and baking powder, add to the egg mixture and mix.
 3. Add the nut mixture and mix.
 4. Transfer the dough to the baking sheet and shape into an oval roll. Bake for 25 minutes or until a skewer inserted in the middle comes out clean. Leave to cool and cut into 5 mm thick slices.
 5. Arrange in a single layer on a baking sheet. Preheat the oven to 100 °C and leave the rusks to dry out overnight.
