Classic Madeleines
4 eggs
1 1/2 cups sugar
1 tbsp grated lemon rind...
1 tsp vanilla essence
2 cups flour
1 1/2 cups butter , melted and clarified

2 cups flour
1 1/2 cups butter , melted and clarified
Preheat oven to 190 C .
Butter madeleine moulds well .
Combine eggs , sugar and lemon rind in a large bowl .
Place over warm water to heat mixture .
When warm , remove from heat and beat at high speed until light and fluffy and tripled in bulk .( I put the mixture into the microwave on high for one minute and then beat it )
Add vanilla
Fold in flour , then butter DO NOT beat after the flour has been added.
Fill moulds 2/3 full .
Bake for about 10 minutes or until tops are golden .
Remove from moulds immediately.
Grease moulds again , refill with batter and bake .
Continue until all batter has been used.
