Christmas Fruit Loaf

Christmas Fruit Loaf
Makes 1 fruit loaf
250 ml butter – at room temperature
 250 ml brown sugar
 250 ml self raising flour
 2 eggs
 100 ml greek yogurt
 100 ml Safari Raisins & Cranberries
 100 ml Safari Almond slivers
 100 ml glazed cherries
 100 ml white chocolate Chips a pinch of salt
Maraschino cherries for decoration
Pre-heat oven to 180 C. Place the butter and sugar in the bowl of your electric mixer and mix until it is light and fluffy. Add the eggs and mix for another minute or two. Fold in the yogurt and lastly fold in all the other dry ingredients. Spoon into a loaf tin that you have lined with baking paper. Bake for 35 – 40 minutes or until a skewer comes out clean when inserted into the loaf. Remove from the pan and serve on a plate or wooden board, sprinkle with icing sugar and top with Maraschino Cherries
