Summer sunshine fridge tart
Ingredients:
1 can condensed milk...
1/3 cup lemon juice (freshly squeezed or bottled)
250 g smooth low-fat cottage cheese
250 ml cream
2 x packets of Tennis biscuits
Whisk condensed milk and lemon juice together for 3 minutes.
Add cottage cheese and whisk untill smooth.
In a separate bowl, whisk cream untill stiff. Add to cottage cheese mixture and whisk untill incorporated.
Arrange one layer of tennis biscuits in a big, shallow dish (square of rectangular works best)
Top biscuits with half the cottage cheese mixture.
Arrange a second layer of tennis biscuits and cover with the rest of the cottage cheese mixture.
Smooth the top, and leave in fridge for 30 minutes to cool.

Top layer:
1 can of orange segments or mandarin segments
1 small can of passion fruit pulp
50 ml water
3 teaspoons custard powder
Drain liquid of orange segment can into a saucepan. Add passion fruit pulp and bring to a simmer.
Dissolve custard powder in the water, and stir into simmering liquid. When it starts to thicken, remove from heat immediately. Leave to cool slightly and stir every few minutes.
Remove tart from fridge and arrange orange segments on top.
Pour cooled thickened liquid on tart and refrigerate for at least 4 hours before serving.
Serve straight from fridge.
