Peppadew & Feta Quiche



Peppadew & Feta Quiche
Preparation time: 20 minutes
Baking time: 40 minutes
Skill level: easy...
Serves 4 - 6
Base
250 ml (140 g) Snowflake cake wheat flour
250 ml (100 g) grated Cheddar cheese
125 g butter or margarine
Filling
30 ml cooking oil
1 medium onion, coarsely chopped
1 clove garlic, crushed
50 g (about 10) peppadews®, coarsely chopped
50 g feta cheese, crumbled
2 extra-large eggs
200 ml milk
30 ml chopped fresh mixed herbs or 10 ml dried
salt and freshly ground black pepper to taste
1. Base: Combine flour, cheese and butter and mix to a soft dough (to mix in a food processor works well). Press dough onto base and sides of a greased 24 cm ovenproof tart or quich dish.
2. Filling: Heat oil in a medium, heavy-based frying pan. Add onion and garlic and sauté for a few minutes until soft. Remove from heat and leave to cool slightly.
3. Spoon onion mixture onto pastry base, then layer with peppadews® and feta cheese.
4. Whisk eggs, milk, herbs and seaoning together. Pour over filling. Bake in a preheated oven at 160 °C for about 40 minutes, or until set and light brown.
Variation
- Substitute peppadews® or feta with any other ingredients, such as 125 g button mushrooms, chopped or 125 g rindless streaky bacon, chopped
