Fatima's Prawn Ahkni
Ingredients
30-40 Large Prawns cleaned , leave half with shell on...
2 medium onion cut into thin slivers
4 tablespoons of oil
3 tablespoons of pure butter
1 green pepper , red pepper and yellow pepper cut into strips
3-4 garlic cloves finely chopped
3 cardamom pods
5 stick cinnamon
2 bay leaves
1 heaped teaspoon of cumin seeds
Salt to taste
1 teaspoon of freshly ground black pepper
2 tablespoons of roasted Masala 2 tablespoons of paprika
1 teaspoon of turmeric
3 whole chilies
Some freshly chopped coriander and flat leaf parsley

Some freshly chopped coriander and flat leaf parsley
650 grams of basmati rice cooked for 8-10 minutes only in salted water with half a teaspoon of turmeric . Strain and set aside .
Method .
In a large pot heat your oil and add your onions , sliced peppers , salt , chilies and whole spices and fry until golden brown. Next add your spices and 2 skoortjies water ( tablespoon ) and stir fry , next add your prawns and butter and cook for only two minutes . Next add half a cup of hot water and your rice and cover with lid and put your heat on simmer for 10 minutes . Give one final stir and simmer for another 15 minutes . Sprinkle with the freshly chopped coriander and parsley .
