Italian Omelette





Italian Omelette
INGREDIENTS
•150 g Fatti’s & Moni’s Spiral Pasta
•60 ml olive oil
•3 spring onions, chopped
•125 g smoked sliced ham, cut into strips
•6 eggs
•60 ml sour cream
•Salt and freshly ground black pepper to taste
•30 g grated Parmesan cheese
•30 ml chopped Italian parsley
•15 ml chopped fresh basil
•75 g Cheddar cheese, grated

METHOD
1.Heat half the oil in a heavy-based frying pan. Add onion and sauté until onion is translucent.
2.Add ham slices and stir-fry for 1 minute. Remove from heat.
3.Whisk eggs, sour cream, and seasoning together. Stir in the pasta, Parmesan, herbs and onion mixture.
4.Heat remaining oil in the same pan. Pour egg mixture into the pan. Sprinkle cheese over. Cook over low heat until egg starts to set around the edges. Place under a preheated grill in the oven and grill until egg is set in the centre and cheese is melted and bubbling.
5.Slice into wedges and serve with a side salad.
VARIATION: Replace ham with chopped crisply fried bacon. Add 50 g chopped sweet piquant peppers to omelette mixture.
