Condensed Milk Tipsy Puddings




Condensed Milk Tipsy Puddings
SAUCE
1 tin (397g) condensed milk
½ tin (150ml) hot water
2 tbsp brandy
PUDDING
1 tin (150ml) hot milk
1 tin (300ml) chopped, pitted dates
1 tsp (5ml) bicarbonate of soda
½ tin (150ml) melted butter
½ tin (150ml) Selati Muscovado sugar
½ tin (150ml) chopped walnuts
1 ½ tin (450ml) cake flour
Grease 6 cleaned and emptied condensed milk tins and preheat the oven to 180C.
Combine the sauce ingredients; condensed milk, water and brandy and boil for 2 minutes. Set aside and keep warm.
To make the pudding, combine bicarbonate of soda, milk and dates.
Mix the butter and sugar, then add the milk mixture, walnuts and flour.
Divide amongst the greased tins and bake 15-20 minutes or until springy on top.
As soon as they come out the oven, pour the sauce over the puddings and serve with ice cream or custard.
