Carrot & Apple Loaf:


INGREDIENTS
500 g GOLDEN CLOUD
Bran Muffin Mix 15 ml mixed spice 5 ml cinnamon
65 g grated carrot
65 g grated Granny Smith apple 125 ml oil
375 ml fresh cream 1 large egg

Topping:
1 Granny Smith apple; cored, halved and thinly sliced
50 ml cinnamon sugar

INSTRUCTION
1 Preheat oven to 180 °C. Grease and line a 22 cm x 11 cm loaf tin.

2 Mix the dry Golden Cloud Bran Muffin Mix with the mixed spice and cinnamon. Add the grated carrot and apple and mix through.

3 Beat the oil, cream, milk and egg together and add to the dry ingredients. Mix until just mixed through.

4 Fill the loaf tin until two thirds full. Arrange the apple slices on top and sprinkle the cinnamon sugar over. Bake for 30 - 35 minutes or until a skewer comes out clean when inserted.

5 Allow to rest for a few minutes before turning out on a wire rack to cool.

6 Serve at room temperature.
