TENNIS BISCUIT FUDGE

Ingredients:

250g margarine
1 egg, beaten
1 tsp vanilla essence
1 pkt Tennis Biscuits
500g icing sugar
3 Tbs cocoa
1 tsp coffee powder

Method:

Melt the margarine and add the vanilla, icing sugar, coffee, cocoa and egg.
Add crushed Tennis Biscuits and mix together.
Press into a square baking dish (or you can roll into small balls). Put in the fridge to set.
Cut into squares.
These can be coated in coconut if desired.
