Courgette fritters















Ingredients:

250ml self-raising flour
3 eggs, lightly beaten
4 or 5 courgettes, grated
2 rounds feta cheese, crumbled
5ml paprika
60ml parsley, chopped
60ml mint, chopped
Olive oil for frying

Method:

Mix flour & eggs in a large bowl until smooth. Add remaining ingredients and mix to combine.

Place a few drops of olive oil in a non-stick pan and fry dollops of the fritter mixture until golden brown on both sides.

Serve with grated cheddar cheese
