ROASTED BUTTERNUT BROWN BREAD
RECIPE
INGREDIENTS
1 butternut halved and roasted (with butter and honey)
500g brown bread flour
1 Tbsp instant yeast
1 tsp salt
1 Tbsp honey (or brown sugar)
300ml lukewarm water (or milk)
METHOD
In a mixing bowl mix together flour, yeast , salt
Mix honey with water and add to the dry ingredients
Mix to form a soft dough
If dough is too wet add flour or if too dry add more water or milk
Mash half of the butternut and add to the dough
Mix until all butternut mash is incorporated
Cover with clean cloth, place on a warm place and leave to rise for 1 hour or until doubled in size
Once dough has risen knock I down and place on a well prepared loaf tin
Cut the other half of butternut in cubes and insert the cubes in the dough, pushing in using your fingers
Cover and let it rise for 15 minutes
Bake in the preheated oven at 180 degrees for 45 minutes or until bread is cooked through
Serve with stew
NB - Substitute butternut with sweet potato
