Vegetables in Crispy Batter

INGREDIENTS
375 ml (250 g) Snowflake easymix pancake
1 extra-large egg
10 ml cooking oil
250 ml water
250 g broccoli and cauliflower, most of stems removed
1 medium onion
METHOD
1. Place premix into a mixing bowl. Lightly beat egg, oil, water and seasoning together. Add to premix and mix with a whisk until batter is smooth, thick and lump free.
2. Break the broccoli and cauliflower into bite-size florets and set aside. Slice the onion into thick rings.
3. Heat oil in a small, heavy-based saucepan. Dip the vegetables into the batter and deep-fry in hot oil for a few minutes until golden brown and crisp. Remove from the oil and drain on paper towel. Serve immediately with sweet chilli sauce.
Variation
Substitute the broccoli, cauliflower and onion with 3 medium onions or other vegetables such as butternut.
