Sweet & sour livers

INGREDIENTS
500 g beef or chicken livers
60 ml (35 g) Snowflake cake wheat flour
about 45 ml olive oil
1 large onion, coarsely chopped or cut in quarters
1 medium green pepper, seeded and cut into strips
6 (about 60 g) peppadews, cut into large strips
½ fresh pineapple, peeled, coarsely chopped
Sweet and sour sauce
125 ml sweet chilli sauce
60 ml olive oil
3 ml Worcestershire sauce
2 ml soy sauce
125 ml fresh lemon juice
10 ml finely grated lemon rind
60 ml light brown sugar
10 ml Snowflake cornflour
METHOD
1. If using beef liver, remove membrane and cut into large chunks. Wash and dry well. If using chicken livers, cut into smaller chunks. Mix the liver pieces with flour and seasoning.
2. Heat olive oil in a large, heavy-based frying pan. Add liver pieces and fry until golden brown.
3. Add onions, green pepper, peppadews™ and pineapple pieces and fry lightly for about 2 minutes.
4. Sauce: Combine all the ingredients. Add to liver mixture in pan and fry for about 2 minutes, stirring constantly. Serve warm on toast or health bread
