Potato Pudding




Potato Pudding
Ingredients
1 kg of potatoes...
1 liter of full cream milk
130 grams of butter
2 & 1/2 cups of sugar
1/2 a cup of cake flour
1 teaspoon of baking powder

3 tablespoons of Vanilla essence
10 eggs
3 tablespoons of custard powder
1/2 a teaspoon of ground cardamon ( optional )
Boil potatoes till soft, drain and place in a bowl now mash and add butter and 1/2 a cup of the milk till smooth now fold in the sugar , flour and vanilla essence and mix till well combined.
Now Take a little milk and mix with custard powder .
Beat remaining milk , eggs and custard powder mix till well combined and add to potato mash . Mix well till well combined.
Pour the mixture in a greased deep oven baking tray and bake at 180 deg C , for Fan ovens 160 deg C for one hour . Take out of oven and allow to set ...
Take some dried fruit mix and add to pot with a cup of water and a cup of sugar - boil for 10-15 minutes and allow to cool , pour or place stewed fruit over potato pudding and slice in squares and serve . Delicious !!!
