One-Pan Meal
Main Ingredients
1 dash garlic avocado oil, for frying
1 onion, finely chopped
3 large potatoes, cooked, diced
1 can tomato and onion mix
2 tbsp white balsamic vinegar
1 tbsp dried oregano
1 pinch salt and milled pepper, to taste
4 large eggs
Heat oil in a large heavy-based saucepan.
Add onion and potato and sauté until cooked through and golden.
Add tomato and onion, vinegar, oreganum and seasoning.
Simmer for about 8 minutes .
Make 4 little hollows in the tomato mixture. Break an egg into each hollow. Cover and cook about 3-4 minutes, or until done to your liking.
Serve with hot buttered toast.
