Christmas Cookie Decorations

Christmas Cookie Decorations

Biscuits ...

Ingredients
750 ml flour
375 ml sugar
2 eggs
170 g butter, room temperature
7.5 ml baking powder
5 ml vanilla extract

50 g Safari Currants

Method
Cream the butter and sugar until creamy and light in color.
Beat eggs in a bowl and add to the butter mixture.
Add the remaining ingredients and mix well . ( It should form a stiff dough )
Place the dough in a bag and allow to rest in the fridge for about 30 minutes.
Preheat oven to 160 C.
Add a little flour to your work surface and roll out the dough with a rolling pin to about 5 mm.
Use Christmas themed cookie cutters and cut out the biscuits. place on a baking sheet that you have lined with baking paper.
Bake the cookies or 10min. If it still is not lightly brown on top then you bake it for another 5 min .
Remove from the oven and leave the cookies to cool.

For the icing

Ingredients

2 eggs – separated

3 cups icing sugar – sifted

food coloring

Method
Separate two eggs and keep the yolks for later to use in custards or omelets. Add the icing sugar to the egg whites and whisk until it is completely lump free. Divide the icing into three bowls and add the coloring that you want.
Add the egg white in a bowl and 3 cups icing sugar and whisk together . Divide the icing into 4 bowls . You can then use any 4 colors color as you see fit . Use a knitting needle or kebab stick to make little holes at the top of each cookie to put a ribbon through for hanging. Go crazy and make these cookies uniquely yours!
