MIKROGOLF VRUGTEKOEK




MIKROGOLF VRUGTEKOEK

Bestanddele/Ingredients:
500g vrugtekoekmengsel/fruit cake mix
205g bruin suiker/brown sugar
130g margarien of botter/margarine or butter
250 ml water/water
5 ml koeksoda/bicarbonate of soda
100g glanskersies in kwarte gesny/glazed cherries cut in quarters
10 ml kitskoffiepoeier/instant coffee powder
500ml koekmeelblom, gesif/flour
5 ml bakpoeier/baking powder
5 ml gemengde speserye /mixed spice
5 ml kaneel/cinnamon
2 eiers, geklits/eggs, beaten
100g pekanneute/pecan nuts
brandewyn/brandy

Metode/method:

1. Plaas koekvrugte, suiker, botter/margarien en water in 'n diep mikrogolfbak.(Place fruit mix, sugar, butter and water in a deep microwave bowl.)

2. Bedek met kleefplastiek of mikrogolfdeksel en mikrogolf vir 5 - 6 min. by 100% krag. (Cover with glad wrap and microwave for 5-6min at 100% power.)

3. Roer twee maal tussenin.(Stir two times during this cooking process)

4. Voeg koeksoda, kersies en koffiepoeier by.(Add bicarb, cherries and coffee powder)

5. Roer en laat mengsel heeltemal afkoel.(Stir and let mixture cool down completely)

6.Die mengsel sal opbruis sodra die koeksoda bygevoeg word. (The mixture will fizz after the bicarb has been added)

7. Sif meelblom, bakpoeier, speserye en 'n knippie sout saam.(Sift flour, Baking powder, spices and salt together)

8. Roer om die beurt met geklitste eiers by afgekoelde vrugtemengsel. (Stir into the fruit mixture, alternating with beaten eggs)

9. Voeg neute by en meng goed.(Add nuts and mix well)

10. Smeer 'n diep ronde (24 cm) mikrogolfbak of glasbak liggies (of Spray n Cook dit), voer die boom uit met kombuispapier.(Grease a deep microwave bowl or pyrex bowl lightly)

11.Skep beslag in die voorbereide bak, en mikrogolf vir 20 minute by 50% krag en dan vir 'n verdere 20 minute by 30% krag.( Spoon mixture into bowl and
microwave for 20min at 50% power and then for another 20min at 30%power)

12. Laat koek heeltemal afkoel in bak en keer dan uit.(Let cake cool down and turn out when cool)

13.Gooi genoeg brandewyn (ongeveer 75 - 100 ml) oor.(Pour brandy over cake-75 to 100ml)

14.Draai toe in foelie.(Wrap in foil)

Wenk: As die koek 'n klam kol in die middel het, bedek die rand van die bak met foelie en mikrogolf vir 3 - 4 min. by 100% krag.
Tip: If cake has a soggy spot in the middle, cover bowl with foil and microwave for 3-4 min at 100% power.
