Peel the zest from 5 un-waxed lemons, avoiding any white pith. Put it into a large, clean jar and add a bottle of good quality vodka.
Seal with a tight-fitting lid and leave for a week, shaking up the jar daily. Place 750g sugar in a bowl and pour over 700ml boiling water. Stir until sugar has dissolved. Add to the vodka and peels and leave for another week, shaking the jar regularly
