Fair Cape Dairies Falafel Recipe

IT'S WORLD FALAFEL DAY!!
Tzatziki sauce with falafels
Preparation time: 15 minutes for the tzatziki and 10 minutes for the falafels
Cooking time: 25 minutes for the falafels

World Falafel Day! A day that celebrates the humble chickpea in its most decadent form! Deep-fried and composed of chickpeas, this Middle Eastern food is often found wrapped up in a pita bread or served with salad and sauces. I have one secret ingredient to the perfect falafel pita: my homemade tzatziki sauce. Made deliciously creamy with Fair Cape Dairies’ full cream plain yoghurt, this is a refreshingly herby and zesty addition to most meals.
I also love making lamb meatballs with pita breads and this tzatziki sauce is just delicious with its minty freshness. Quick to whip up and full of the good stuff, you should pin this recipe to your fridge for easy access!
Ingredients:
1 ½ cup Fair Cape Dairies’ full cream plain yoghurt
Zest of one lemon
Juice of one lemon
2 garlic cloves, minced
1/5 cucumber, grated
½ handful of fresh mint, chopped (or to taste)
½ handful of fresh dill, chopped (or to taste)
Salt and freshly ground black pepper to taste
Method:
Combine all ingredients in a small mixing bowl and adjust the seasoning and/or lemon juice to taste. It will keep well in the fridge (covered) for 2 days, but I can guarantee you – there won’t be much left to save!
Tips:
• You can use any fresh soft herbs you have, including coriander or parsley. Traditionally made with dill, I love adding mint, but I’ve also made it with a variety of herbs.
• Great with vegetarian and meat dishes, especially lamb.
• By adding a bit of olive oil, you can thin out the tzatziki to make a great salad dressing!
