Jungle Energy Crunch Muesli and Buttermilk Rusks
500 g Jungle Energy Crunch Muesli Raisins
500 ml Jungle Oat Bran
1 litre Buttermilk
8 x 250 ml Self-raising flour
30 ml Baking powder
5 ml Salt
500g Butter, cut into cubes
1.Preheat the oven to 180 °C.
2.Beat the eggs and sugar for 10 minutes.
3.Add the buttermilk and mix through.
4.Sift the flour, baking powder and salt together.
5.Rub the butter into the mixture with your fingertips until it resembles fine breadcrumbs.
6.Add the Jungle Energy Crunch Muesli Raisins and Jungle Oat Bran and mix through.
7.Add the egg mixture and knead until it forms a dough.
8.Roll the dough into small balls before and press into greased bread tins or a greased oven pan.
9.Bake for 30 minutes then reduce the oven temperature to 160 °C and bake for a further 20 minutes.
10.Break or cut the rusks and dry them overnight at 50 °C with the oven door slightly ajar. Store in an airtight container.
