Cottage Cheese Egg Muffins with Ham and Cheddar Cheese

Ingredients:
1 cup cottage cheese
6 eggs (lightly beaten)...
1 cup flour
2 teaspoon baking powder
pinch of salt

pinch of
pinch of black pepper
1/2 cup ham (chopped) ~(or cubed bully beef, or crispy bacon)
1/2 cup cheddar cheese (grated) * plus extra for sprinkle
1/2 green pepper (diced)
* butter

Directions:
Preheat oven 180 C
Mix the cottage cheese, eggs, flour, baking powder, cayenne and pepper, pinch of salt in a bowl.
Stir in the ham, cheddar cheese and green peppers
Rub some butter in the muffin dish to prevent sticking.
Fill up 3/4 full, Sprinkle with extra cheese
Bake in a preheated oven until they are golden brown on top and a toothpick poked into the center comes out clean,
about 25-30 minutes.
