Orange Marmalade Syrup Cake Recipe
Ingredients
¼ cup (125g) butter, softened
1 cup (250ml) castor sugar
Rind of 2 oranges (keep juice for syrup)
3 eggs
1 cup (250ml) buttermilk
3 tablespoons (45ml) Rhodes Orange Marmalade
1 ½ cups (375ml) cake flour
2 teaspoons (10ml) baking powder
Pinch salt
Orange syrup
Juice from the 2 oranges
1 cup (250ml) Rhodes Seville Orange Marmalade (warmed)
Orange slices to decorate
Method
1.Cream butter and castor sugar together in a bowl until light in colour.
2.Add the orange rind.
3.Add one egg at a time and beat well after each addition.
4.Fold in the buttermilk and jam.
5.In a separate bowl, sift the flour, baking powder and salt, add these to the creamed butter mixture and combine.
6.Spoon batter into a grease cake tin or ring tin, and bake for 40 - 50 minutes. Remove cake from pan and cool on a cake rack.
7.Heat the orange juice and marmalade on stove top.
8.Remove the cake from the oven, prick with a fork and pour hot marmalade mixture on top.
9.Leave to cool in tin for 5 minutes.
10.Remove and decorate with orange slices.
Useful Tips
Use Rhodes Lime Marmalade instead of the Seville Orange Marmalade.
