Bacon and Mushroom Quiche

Bacon and Mushroom Quiche
Preheat your oven to 180 degrees celcius.
Use the Easy Quiche Dough recipe for the crust OR go crustless!
1 onion, peeled and chopped
1 clove of garlic, peeled and chopped
15ml olive oil
2 teaspoons of mixed herbs / two sprigs of thyme and rosemary
1 packet of bacon, cut into small pieces
1 packet of mushrooms, any kind, cut into smaller chunks

3 eggs
¾ cup of milk
1 ½ cup of cheddar cheese
Salt and pepper to taste.
Heat the oil in a saucepan and brown the onion, garlic and bacon.
Add the mushrooms and herbs and cook until dry.
Take off the heat.
In a medium mixing bowl, whisk the eggs and milk.  Add the bacon and mushrooms to it and mix.
Add the cheese.
Prepare your oven proof dish with easy quiche dough.
Pour the filling into the raw dough, and bake at 180 degrees, for 40 minutes until set and brown.
Add side dish of salad or veggies, season and serve

Use this very easy and simple pastry recipe to use over and over for your favorite quiches.


  • 2 cups of flour
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 125 grams of soft margarine
  • 20 ml cold water


  • Add all the dry ingredients and mix. Next add all the wet ingredients and work with your fingers until easy manageable dough is formed. 
Next line your tart or quich tin with dough by pushing it firmly down with your fingers.
No need to blind bake this dough, simply add your filling to the raw crust and bake for 30 - 40 minutes until your filling is set.
The dough bakes with the filling - and gives a delicious, crisp crust to your quiche.
