Potato Omelette

As cheese is high in bad saturated fat, rather use a strongly flavoured cheese such as mature cheddar so that you can use less to achieve the same taste
Ingredients
4 Eggs lightly whisked
125 ml Milk
5 ml Paprika
5 ml Thyme
65 ml Grated Cheddar Cheese
1 tablespoon Olive Oil
2 Cooked Potatoes peeled and chopped into 1.5 cm squares
Instructions
Preheat the oven grill.
Boil or steam potatoes for 10 - 15 minutes or until just tender. Pat dry.
Heat the oil in a frying pan over medium heat.
Add potatoes and cook for 3 - 4 minutes or until the edges are golden.
Combine eggs, milk, Robertsons Paprika and Thyme in a small jug.
Pour over potatoes and cook for 10 - 12 minutes or until egg is almost set.
Sprinkle cheese on the top of the omelette and transfer to a hot grill, cook for 2 -3 minutes or until top is set and cheese is golden
Sprinkle with extra
Thyme to serve.
