Fatima's Delicious Daltjies
Ingredients
2 cups of Pea or Channa flour...
2 cups of cake flour
3 teaspoons of baking powder
2 teaspoons of salt ( or salt to your taste )
2 teaspoons of turmeric
1 tablespoon of roasted masala
1 egg
1 peeled and grated onion
1 tablespoon of finely chopped or grated garlic
1 potato peeled and grated .
2-3 cups of chopped spinach
+- 2 cups of water or just enough to make a thick batter .

1 liter of oil for deep frying .
Method .
Mix all your ingredients together in a bowl. .your batter should not be runny but have a drop consistency ...
Heat your oil in a pot and drop a spoon full at a time using your finger to push batter off spoon and into the oil ..do not drop the batter from a height as this will cause splashing of hot oil . Fry on medium to high heat until you see the daltjies flip over by itself or very easily when you do it ..about 2-3 minutes on each side ..don't allow the oil to become too hot as this will result in a burnt daltjie and raw inside .
Take out with a slotted spoon and place on kitchen towel paper .
You may add some chopped coriander , spring onions or chilies as well .
My tips - Flat and oily daltjie , too little flour and baking powder and your oil was not hot enough to create a seal .
Dry and dense , too much flour .
Raw on inside , the temperature of oil was too high .
You can test your oil by dropping a teaspoons worth of batter , if it bubbles immediately and rise to the surface quickly boeta maanie is your uncle . (".)
