Pineapple and Chicken fried rice




Pineapple and Chicken fried rice ..
This dish needs you to use left over rice from the night before (".) As its more dryer and will not become soggy when stir frying .

Ingredients
6-8 pieces of chicken
For sauce
Salt and black pepper to your taste
1 cup of crushed pineapple or chopped fresh pineapple
3-4 tablespoons of Worcestershire sauce
2 tablespoons of brown sugar
3 tablespoons of butter
1 teaspoon of chili powder
1 tablespoon of paprika .
A few cloves of garlic finely grated .
A few cups of leftover cooked rice .
Method
Take all your sauce ingredients and add them in a saucepan and Cook on a medium heat for about 5 minutes . Allow to cool .
Place your chicken in a bowl and pour over all the sauce ingredients . You may cover and place in fridge to marinade for a few hours , or go to the next step .
Next - Place your chicken on a baking tray that's been lined with foil or baking paper and bake at 220 degc for one hour , or until sticky , crispy and golden brown on top.
Next place all your rice in a large frying pan , wok or large flat pot . Then place you chicken on top of your rice and pour over all remaining sauce and stir Fry for about 8minutes and close with lid .
Just before serving , add chopped fresh coriander and a few lemon wedges . Lemon goes perfect with this dish . If you want the food to go far and feed more ...simply add fried small cubes of potatoes on top before serving .
