Banana Split with Milk Tart Ice-cream
Serves 4
Ingredients
4 bananas...
40 ml golden syrup
4 knobs of butter
20 ml brandy

Method
Pre-heat oven to 180 C.
Use baking paper of about 20 x 30 cm and fold on half.
Peel the banana and halve lengthwise,
Place the banana, a knob of butter, some golden syrup and a splash of brand on one half of the paper and fold the other half over.
Close the edges to form an envelope and place on a baking sheet.
Repeat with the other 3 parcels.
Bake for 3-4 minutes and serve with the milk tart ice-cream

Milk Tart Ice-Cream
makes 1 liter
Ingredients
600 ml milk
5 ml fine cinnamon
2 ml fine nutmeg
6 egg yolks
160 g castor sugar
30 ml custard powder
400 ml cream
5 ml salt
Method
Pour the milk, cinnamon and nutmeg in a pot and bring to almost boiling point.
Turn the heat off and allow the milk to infuse.
While this is happening, add 6 egg yolks, custard powder and the castor sugar to your mixer and beat until it form soft ribbons. Slowly add the hot milk to the egg mixture while the mixer is running.
When it is completely mixed, add the milk/eg mixture to the pot and stir until it thickens.
Add the cream and stir through.
Pour the custard into a plastic container and allow to cool. when it has cooled down, place the container in the freezer and every half hour use a fork and break up the ice-crystals in the ice-cream.
One it has frozen completely, place the container’s lid on and keep until needed!
