Fatima's delicious Leg of Lamb
Ingredients
1 Leg of Lamb...
5 tablespoons of oil
4 onions peeled and chopped into 4
3carrots peeled and cut into 2
8 garlic cloves peeled
Salt
Black ground pepper
2 Rosemary sprigs

5 tablespoons of oil
4 onions peeled and chopped into 4

Method
With leg of lamb take a sharp knife and make 2cm deep cuts/incisions into meat at different points all over the joint , now take your peeled garlic and push one piece of garlic in each hole until all the holes are filled with garlic .
Now season your Leg of Lamb with 1+2 tablespoons of salt and lots of freshly ground black pepper .
In a very large pot heat the oil till very hot , now place the leg of lamb in heated pot with your onions , rosemary sprig and carrots , allowing it to brown on all sides and the veggies to turn brown as well , this will ensure a deep rich flavor . The browner the better !!!
After your meat and veggies has been browned on all sides ( will take 10-15 minutes) you now take 4 cups of hot water and add it to the pot , bring up to the boil ... Switch your heat down to medium and close the pot with lid and allow to cook slowly , when you see after an hour or so the water in the pot will have almost cooked away , now add 2 cups of hot water every 35-40 minutes - allow to cook for +- 3 hours .
Take the meat out of the pot and into the heatproof dish . Take the leftover juices in pot and strain it into a smaller pot , place on hot stove , add one tablespoon of flour and 1 tablespoon of butter and stir until gravy has thickened and is glossy and yummy .
Now your cooked Leg of lamb has rested , you cut the meat into slices and immediately pour all the gravy over the meat to keep it moist . Place foil over the meat until ready to serve.
