Honey & Mint Melon Balls
Ingredients
125 ml honey
15 ml lemon juice
30 ml finely chopped mint or spearmint
Mint leaves to garnish
4 x 250 ml mixed melon balls, chilled
Method
Place the honey, lemon juice and chopped mint in a glass jug and microwave for 60 seconds on high until heated, but not boiling. Set aside to cool completely, then strain and pour over the melon balls.
 Toss lightly to mix and serve garnished with whole mint leaves.
 Serves 4 – 6 as a starter or dessert
