STIR FRY CALAMARI:

STIR FRY CALAMARI:
Preparation Time: 7 mins 
Serves: 4 people 
Helpful Hints:
To defrost and serve: Defrost on 30% (defrost) power, eight to 10 minutes. Reheat on 70% (medium-high) power, three to four minutes or until piping hot. Serve with buttered ribbon noodles.
INGREDIENTS:
Frozen calamari tubes, cut into rings 500 grams
Oil (1 tbs) 15 ml
Onions, sliced 2 
Cloves of garlic, crushed 3 
Ground ginger (1/2 tsp) 2.5 ml
Fennel seeds (barishap) (optional) (1 tsp) 5 
Masala (1 tsp) 5 ml
Baby marrows, julienned 100 grams
Carrots, scraped and julienned 100 grams
Tomato paste (2 tsp) 10 ml
Sugar (1/2 tsp) 2.5 ml
Soy sauce (1 tbs) 15 ml
Chicken stock (1/2 cup) 125 ml
Cornflour (2 tsp) 10 ml
WAHT TO DO:
1.Rinse calamari under cold water, soak in hot water five minutes.
2.Place oil, onions and garlic in a casserole dish, microwave on 100% (high) power, one minute.
3.Add spices, microwave on 100% (high) power, 30 seconds.
4.Add vegetables, stir-fry on 100% (high) power, two minutes. Vegetables should be crisply tender.
5.Add calamari, stir-fry on 100% (high) power, two minutes. Be careful not to overcook.
6.Combine tomato paste, sugar, soy sauce, chicken stock and cornflour. Stir into mixture, microwave on 100% (high) power, one minute, or until sauce is clear and thickened. Stir twice.
7.Allow to cool, place in freezer container, seal and freeze.
