INGREDIENTS:
500 grams chicken necks
3 tbsp lemon juice
2 tbsp brown sugar
100 grams Kerrygold pure Irish butter
2 tbsp PnP mixed braai spice
WHAT TO DO:
The first very important thing to know is that you shouldn’t remove any excess fat off the chicken necks – it adds flavour. Put the chicken necks in a bowl and add the lemon juice and brown sugar. Massage the necks thoroughly, cover with cling wrap and leave to marinade for at least 2 hours – you can also leave it overnight. (You can also use the apricot marinade instead –
Once the fire is ready (and your friends are starting to misbehave and in dire need of a snack) braai the necks on hot coals and season with your favourite braai spice. Turn them regularly and baste with melted butter until they are cooked through – it should take about five minutes – depending on the heat of your coals.
